The diurnal swing between foggy mornings and cool evening paired with the vibrant sun during the day invites seasons with long growth. Our grapes provide a unique mixture of acidity and ripe fruit. Our vineyard team work in harmony with the flow of nature every year. Each aspect of weather from rain to frost to the air patterns are carefully tracked and monitored to ensure that each vine receives the necessary care and attention. Rather than focusing on some recipe, here at Zeka we rely on our knowledge, intuition, and constant conversation with the land. No decision is made hastily. Every part of our process is done meticulously by hand, from trimming to harvesting, in order to ensure a consistent Pinot Noir that lives up to our expectations of high-quality.
To us at Zeka sustainability isn’t just a descriptive word we use to sound appealing; it is a crucial component to our daily winemaking process. We pride ourselves on using natural methods, minimizing the use of chemicals to ensure the vines and the soil’s health as well as the local wildlife. The plants are also fed compost to keep them at the best health possible without risking the health of the natural environment. The crops that we have planted between the rows serve to bring beneficial insects to the soil that help keep it at the right temperature. It is extremely important to the quality of our wine and our philosophy that our vineyard and the surrounding environment are healthy. During the Fall season, grapes are harvested first thing in the morning when they are fresh. We have individual workers who actively check each bundle instead of a large-scale automated harvest. Only the finest of our grapes are used to make our wine while the remainder of the other grapes are used as compost and returned to the vineyard.
When the grapes enter the winery our meticulous and intricate approach does not change. Our fermentation process is where the story of our grapes transforms into the essence of our wine, marrying the aroma, flavor, and color. At the beginning of fermentation natural yeasts start consuming the sugars in the juice, turning them into alcohol. In order to preserve the integrity of our grapes and the individuality of our vineyard we handle the fermentation process with precision from sorting and destemming to punch-down process to extract color and flavor.
Zeka’s best tasting pinot noir is pressed and put into French wood barrels to age after fermentation. Traditionally when wine is being made people use both new and old barrels to find the right combination of depth and freshness. Newer oak barrels add subtle signs of toast and spices while old oak barrels help to soften and develop the wine without overwhelming the flavors of the fruit.
At Zeka, most barrels age between 10 and 14 months, though there’s no strict timeline. The wine determines when it is ready. Our winemaking team continuously tastes and observes each barrel. They are trained to track how the flavors, structure, and aromatics evolve over time. Some wines are racked earlier to maintain their freshness and purity, however we allow our Pinot Noirs to rest longer in order to preserve its nuance and gain depth in the wine. Every blending decision is made with care and intention to ensure that each bottle embodies the bright, balanced, and expressive Zeka style.
Our Pinot Noir is not just known for tasting great, but also for honestly reflecting our vineyard’s character. Each pour contains vibrant aromas of red berries mixed with subtle notes of dark fruits like cherries and blackberries, spices and the forest floor.
